WHAT'S FOR DINNER?



Hello, friends!  How are all of you?

Philadelphia is now on a Shelter at Home policy so it is much harder to leave your house.  I don't know about anyone else, but I am starting to go stir crazy.  One of the side effects of my medication is depression so that doesn't make things any easier.  We have gotten a lot of cold temperatures and rain so I have not been going out to the yard.  But today is supposed to be warmer and sunny so I am going to try to force myself to leave the house and go outside.  I know I would feel better.

I am sorry I had to put on comment moderation.  I just couldn't take all the hate spewing at me.  Well, now I see it but you don't have to.  Thanks for understanding.

But enough of that.  The one thing I have been doing is cooking.  There is no chance of us going hungry in this house.  Let me show you some of the meals we have been having.

We had left over Irish stew for St. Patrick's Day.  But I couldn't let this time of the year go without having ham and beans.  Well... I didn't have ham so used a can of Spam.  And beans?  Well, I used a package of frozen green and yellow beans and carrots.  Then I added some potatoes to the pot to boil.  It was good.  I know a lot of people don't like Spam, but I love it.  Joe thinks it's so-so.



On Saturday I found one package of pork chops in the freezer.  So I had those along with mashed potatoes and asparagus.  That fresh asparagus was a nice change from all the frozen veggies we have been eating.



Sunday night we ended up having a couple of ham and cheese hoagies.  We had a gift card for Wawa and decided to take a break from cooking.  It was so strange being there.  All the coffee/tea/hot water was taken away.  To get a cup of coffee you must ask someone behind the counter to get it for you.  You can't even put in your own sugar or creamer.  All of the doughnuts and muffins are individually wrapped.  No more helping yourself.  And there was a sign on the door saying that because of social distancing only 10 people at a time were allowed into the store.  A friend told me that she was at her local Wawa and they were lined up outside.  As one person went out, the staff would let one person in.  It's a different world, all right.  I am so glad that this is not going to be forever.  Although it feels like it right now.

Monday I wanted something different to eat and so made some baking powder biscuits.  They didn't last long and I think I will make some more soon.  It also saved our bread which is hard to get these days.



With those biscuits I had a chicken leg done in the air fryer and the rest of the asparagus.



Last night I made macaroni and cheese with the penne pasta.  I didn't think it was as good as usual.  I think I could have used more seasoning and cheese, but Joe liked it.




I also made pierogies and meatballs one night, but I didn't take a picture.  I fried some onions and mushrooms to put over them.  Such a nice change.

Another night I made hamburgers.  I went to RiteAid to get chips to go with them.  I couldn't find buns, but was able to get a loaf of bread to use.  And I bought the last box of Tastykake Butterscotch Krimpets for dessert.  For those who don't know what they are, they are an oblong shaped cupcake sized yellow cake frosted with butterscotch icing.

For tonight, I have absolutely no idea.  I have to go out to the kitchen and see what I have in the freezer.  I'm thinking ham steak and left over veggies.  We'll see.

  2. Sounds like some good meals. We had pork loin and green beans and mashed potatoes last night, thanks to hubby putting the pork in the slow cooker before work. Yum!

  4. You sure are right, there is no chance of you guys going hungry! It's simple cooking but looks delicious.

    I have noticed that I'm getting a lot of hate comments. I think it's trolls (kids), who don't have anything to do. To much time on their hands.
    I think I'll moderate my comments too!

  5. We have to get a little more creative in our meals. I love those biscuits! So yummy! I'm thinking about making some French bread because it doesn't use many ingredients! Take care and stay healthy my friend! Sweet hugs!

  6. Hi Kathy, your meals always look so good. Thanks for Sharing. IO have been trying to walk outside a lot - 4 miles most days. Helps my mental outlook a lot. I may not get all four miles in today since we have had rain and snow. Hope you have a good day and I will look forward to seeing you again soon!

  7. We've been struggling for 3 weeks with shelter at home near San Francisco, but I'm challenging myself to make do with what I have on hand. I consider it part of my Lenten sacrifice. I've been once to a smaller market, avoiding big box stores and larger markets. I ordered groceries online to be delivered this Saturday. The real struggle is for families like my daughters'--both parents working online from home all day and trying to homeschool two kids!

  8. I enjoyed seeing your meals from this past week. If I had to pick a favorite . . . maybe the chicken, biscuits, and asparagus!

    I have actually enjoyed cooking during this self-isolation time. We're all home, so there is no scramble to rush home in time to put a meal on the table. There is time to plan and cook more creatively based on what is in the fridge/freezer.

  10. Such yummy meals! I love biscuits! Thursday was beautiful,hope you did get out.Both Russ & I like spam.You can do so much with it! To brighten my day,I changed my shower curtain to----yellow ducks! Yes,for April showers.Makes me smile.

  11. We are one county over from Pittsburgh and not under the shelter at home policy yet, but I expect it to come any day as we have 24 cases in the county. Neither one of us is working so we are pretty much staying at home, anyway. It surely is a challenge to fill the days and to create yummy meals every day. I'm think we will all learn a few things and be more appreciative of what we have when this thing is all over. Have a good day!

  12. Yes, I too am looking forward to this being over! (but not too soon to be safe) A party sounds like a good idea. One thing for sure we are gaining a new appreciation for all we have taken for granted. I miss my kids and grandkids SO much!!
    Finding things to make for dinner has been ok for us, we rarely eat out or get carry out anyway. But we are All home All day so we are going through the grub!
    Yesterday was a beautiful day and today should be almost the same. The cold rainy days get to me like nothing else! God be with you and keep you, dear friend!

  13. Try and get outside as fresh air as looking at the garden can only be good. There have been some hurtful comments being made so I dont blame you for changing the settings. I will too if it happens to me. All the best in these troubled times.
