WHAT'S FOR DINNER?


 Hello, friends!  First of all, I want to thank all of you who have been writing to me recently for the nice things you have been saying.  Yes, I am concerned with the pandemic just as everyone else is, but life goes on and I try to make the best of it.  Like the rest of you I am looking forward to the day when life will get back to "normal" but in the meantime I am so glad that you find my blog fun and uplifting.  I will always be doing that for all of you.  It is just a few weeks until Halloween and then Thanksgiving and Christmas is not far behind.  In spite of what is going on in the world, you and I are going to have some good times.  So I hope you will continue to read.

Next, I want to share the good news that Joe's COVID-19 test also came back negative.  Yes!  We were both so happy that we are fine despite being exposed to the virus that we went to McDonald's drive-thru for lunch.  What big spenders we are!  But it was nice to get out of the house. 

Today was a beautiful day.  It was sunny and warm.  We even had our front door open letting in some fresh air.  That is so nice and we won't be doing that very much longer.  But we will as long as we can.

My friend Marion stopped over today for a few minutes with a little bag of candy corn and a glow stick necklace to wear on Halloween.  So sweet.  It was good to see her again and we had a nice talk before she had to leave.  Her sister was in the car and she had to take her home.

I thought I would do a "What's for Dinner" post for you today.  I haven't done one in a long time.  And I certainly haven't taken pictures each day.  But here are a few for you.

On Monday the 5th we had chicken thighs done in the air fryer, organic mashed potatoes with garlic and asparagus spears.  I found this box of potatoes in the pantry.  Just enough for one meal.  I am trying to use things up, so this was the perfect side for this meal.  And you all know I love my air fryer for doing chicken.


On Thursday the 8th we had a slice of Hickory Smoked ham, mashed potatoes and Brussels Sprouts.  Another good meal.


On Sunday the 11th I made an Irish stew.  So good.  Do any of you watch the vlog from Diane in Denmark?  The rolls are from that vlog.  She is a Scottish lady who is living in Denmark and she gave the recipe for these rolls.  You stir everything together in one bowl in the morning, let it set and rise all day, then bake them off in the evening.  (Or you can do it in the evening and have them for breakfast the next morning.)  Easy and good.  I will make them again.  They were just right to go with the stew.



Besides these meals, we had Chinese food from a new place we found.  It is really good and not very expensive.  I also had a gyro from our local pizza shop.

Maybe these meals will inspire you.  I hope so.  I am trying to remember to photograph my meals this week, but I think I have only two done.  I'm not very good at this.  When the meal is ready, I just want to eat!

  1. Hi Kathy. I enjoy seeing what you have for dinner. You do give me ideas of what to fix for dinner, and your meals always look so good. So good to hear that you and Joe are both negative for COVID. I thought of you tonight while watching Joe Biden's Town Hall there in Philly. Hope you have a good weekend. See you again soon.

  4. I am so happy for your negative Covid tests. We are being super careful. Our hospitals here are full and they say they don't even have room for accident patients.
    Thanks for posting the meals. It is always fun to follow along someone's every day life.

  5. Hi Kathy, So happy your covid tests are negative. With health issues , you both need to take care. I tell you honey, Ted and I do. So many new cases all over our country, it's scary.   7. Yay for good reports! No, I do not watch the Scottish lady in Denmark...must look for her...am still watching the German man in Germany remodeling his house. Now I think I must tear my lawn up like he did! 😉

  9. Good news on the test results and you and Joe deserved to celebrate! Nice to see your meal ideas and the biscuits looked good. I have never seen Diane’s vlog, but will look for it.

  10. I want to make a stew one night this coming week! Looks SO good! I like mine with cornbread on the side...Southern thing probably! Love the Fall leaves in your kitchen towel! Hugs!
