Pop overheard me talking to my nephew about the Fried Eggplant and Deviled Eggs I'm making him for Monday's celebration at my sister's. When I finished with Ben, Pop said, "WE'RE having fried eggplant, too, right?" I had planned to make it just for Ben, but, after that comment, knew I had to go to ShopRite and get another eggplant! They are on sale this week, and they are gorgeous! I will be frying a lot of eggplant tonight, and will be sharing with a special person tomorrow! After all, I now have 2 eggplants!
