WHAT'S FOR DINNER?


Hello, friends.  Happy Saturday!  It is a little overcast today, but the sun is doing it's best to break through the clouds.  Maybe this afternoon will be brighter.

It has been difficult to be creative with my cooking this week.  We mostly have chicken thighs and pork chops.  How to make them different and appetizing?  It has been a challenge for sure.  And the fact that my back keeps going out when I am cooking does not help at all!  Yes, folks, I am officially falling apart.

Let me show you what we had for dinner this week.

Last Saturday we had spinach and cheese tortellini with marinara sauce and meatballs.  A nice change.


Sunday was a fried chicken thigh, baked potato, and a fresh salad with Zesty Italian dressing.  Yum!  You can see we used our new Easter bunny plates.


I have a little chalkboard in the kitchen that I put the day's menu on.  I've been putting the day and date on it too because, frankly, I sometimes can't remember what day it is.  And to be cute, I put Jack's menu on it too.  So as you can see, on Monday, March 30th Joe and I had meatloaf, mashed potatoes and broccoli.  Jack had Poultry Platter.  Ha, ha!



On Tuesday, I took some turkey stock and leftovers in the fridge and made soup.  I put in a left over chicken thigh, left over veggies and some egg noodles.  I also made some baking powder biscuits to go with it.


Wednesday we had a pork chop cooked in the air fryer with garlic butter, some mashed potatoes and some Brussels sprouts fried in olive oil and butter with salt and pepper.  My favorite way to have Brussels sprouts.  So good!


On Thursday I got my pension check and like every month, we ordered out.  We got a pepperoni pizza and some chicken wings from Dominoes.  It came really quickly too.  It was nice to have a night off from trying to decide what to cook.

Last night I tried a new recipe that I saw on "Good Morning America."  Chef Michael Symon was making a pasta recipe that he said was very forgiving and you could make with whatever you had in the house.  He made it with rigatoni, but all I had was penne. It was so good!  I mean really good.  And easy too.  It is going into my menu rotation.  I am going to give you the recipe next week.  It was easy to make too, and didn't take very long to put together.  The thing that took the longest was cooking the pasta.


And that's it for this week.  Hope I have given you some menu ideas.

FLOWERS




Happy Friday, everyone!  At least I think it is Friday.  Days just seem to run into each other.  No, I know it is because our trash just got picked up.  It has been a beautiful sunny day all day until about a half hour ago.  Now it is cloudy and looks as if it is going to pour any minute.

It has been a week since I have been out of the house.  I am sort of hibernating.  A routine is starting, but with this sleeping all the time, it is hard to keep up with things.

Last Friday Joe went looking for distilled water for his CPAP machine.  Do you know how hard it is to find?  We called four places before we found it at CVS.  So we took a ride over there.  I waited in the car while Joe went in to get it.  When he came out, he had some other things including bottled water to drink which we had been having trouble getting, some snacks, and a huge bouquet of flowers.  He said he wanted to get something pretty and spring like for me since I have been feeling sort of down.

I took pictures of them when I got home to show you.  They are so pretty with all yellow and magenta flowers.

They really are more magenta like seen in this photo.

I noticed the water the flowers are in turned pink.  I thought it was from the flower food I put in the water.

Here it is a week later and the water is even pinker.  And the daisies are turning white.  Hmm.  Could they have been dyed?

Even a week later the flowers are beautiful.  In fact, they have opened up a lot and I think they are even more beautiful than they were last week.


When the sun shines through the front window on them, they just glow.


You can see from these pictures how all the blooms have opened up.


Beautiful, beautiful flowers!


It makes me feel so happy to look across the room and see them.  I am going to be sad when they finally die.


You can see in this picture how some of the flowers are turning white.


Joe said from now on he's going to buy all of the flowers he gets me from the CVS.

WELCOME APRIL


Hello, friends!  I hope you are all well and staying safe in this scary world we are living in.  Joe and I are both fine.  We are staying safe in our home only going out to get food and medication.  Even Joe's doctor appointments have been over the phone.  It's sort of nice to not have to drive all the way to the Veteran's Hospital, sit around for an hour or so, and then drive all the way back.  His doctor called him this morning and in 10 minutes everything was done.

Here's my temperature blanket as of yesterday.  It is getting big.  It now covers from my shoulders to almost my waist.  Joe still tells me to keep working. Can I slap him now?  Ha, ha!  Instead of making a border around it this year, I am leaving the ends on the side to make a fringe.  It will be easier and I like the way it looks.


So let's look back on this past month and see what happened in March.

It began with a great time hanging out with my friend, Donna.  We had such a good time and were going to do it again this month.  Well, guess that will have to wait.  But we will do it again as soon as we can.

Then by the middle of the month the Coronavirus struck.  Our whole lives have changed.  From closures to now we are under a Shelter at Home order where we are not to go out unless it is to get food or medical help.

I really miss going to the nursing home on Mondays.  Especially today when one of the ladies, Jeane, turned 100 years young.  We were able to see her on TV having her family visit her by waving to her through the window of her room.  I can't wait to get back to seeing them and giving her a card that we are having the entire church sign for her.

I miss teaching the Ladies Bible Study too.  Can't wait to get back to that.  I guess I really should be getting my lessons ready during this down time.

I did get my first ice cream from the ice cream truck.  That was nice.  Of course, there are no ice cream trucks going around now at all.

Other than that there is not all that much going on.  I want to spend my time usefully, but it's all catching up and sleeping.  I sleep so much because of my medication.  I am seeing my doctor next week and I hope she will change it to something that I can use with fewer side effects.

Here is your calendar picture for this month.  This is a picture from a tulip farm in Holland.  It's so pretty.  I love tulips.  All of mine are up and about to bloom.  I can't wait.
