A DOWN TIME DAY

I knew today would be a down day for me.  I've been pushing myself and last night I just decided today had to be a day where a lot just didn't get done.  Everyone needs a day off now and then.  I woke up really early (3:30 a.m.) and figured I'd be up for the day when at 4:30 a.m. I was still awake.  Famous last words.  I fell back to sleep and slept for three hours.  Then I took another nap this afternoon.  And as soon as I am finished with this I am going to bed.

So obviously I did not get a lot done today.  Just two more decorating items to show you today.

My pumpkin chalkboard now says "October".  In a couple of weeks it will look like a jack-o-lantern.  But this is it for now.

I bought these pretty placemats in Lancaster when we were out there last month.  Since I have cleaned the junk off of the table and scrubbed it down today I had a chance to actually use them.

For dinner tonight I made a new recipe that I got from my Betty Crocker email.  I was going to make it yesterday, but started feeling sick so made myself some vegetable soup instead.  Let me tell you, this casserole was so good!  I will definitely be making it again.  The only change I made was I didn't have cream so I put in some sour cream I had left over instead.  It was great.  Here is the link if you want to try it.

Baked Penne with Mushrooms, Spinach and Bacon

If you don't want mushrooms or even the onions, I think you could leave them out without it changing too much.  I think I will try it next time with broccoli instead of the spinach.  Or even asparagus.  I can think of so many different ways to make it.  So many different combinations of veggies to add.

I have watched a few more September 11th programs that I recorded but am just now getting to.  It's so sad to think that people are so evil.  On Sunday I watched "9/11: The Days After" and today "The Day the Towers Fell" with live footage and interviews.  I hope something like this never happens again anywhere in the world.

But now I have to end.  I have a super busy day tomorrow. Good night everyone!

Kathy
